Creamy Sago Pudding

Ready for a delicious and energy filled dessert? Sago pudding is the answer! The health benefits of sabudana (sago) are mainly in the carbohydrates (i.e. energy) it provides.   • Heat 4 tbsp of sago in a saucepan with 2 cups of milk. Don't boil but stir occasionally until the sago is a clear, translucent ball (takes 15-20 minutes)
  • Beat 2 egg yolks and a tbsp of sugar and pour into the milk mixture. Stir until smoot and blended in (takes 5 minutes).
  • Add a couple of drops of vanilla essence into the mixture.
  • Beat the 2 egg whites until fluffy and fold into the mixture. Optional - mix in dessicated coconut.
  • Pour into serving bowls and serve with a tbsp of yoghurt or whipped cream and decorate with fruit.
