Buttermilk Pancake Mix

Being a public holiday, I decided to make the most of the lousy holiday weather by enjoying something delicious to feast on indoors and came across a gluten free buttermilk pancake mix by Yes You Can. Intrigued to find out whether it tasted like the real deal, I gave it a go. I was not disappointed!

It was extremely easy to make, the only additional ingredient needing to be added was water and the cooking time was no longer than if you were cooking regular pancakes. The result was a batch of thick pancakes with a light and fluffy texture - and they actually tasted like the real deal. There is also no real way you can muck up making these, which is great for those who require a bit more assistance in the kitchen! I served mine with strawberries, blueberries, maple syrup and bacon. Yum!

The mixture was not high in saturated or trans fat, nor did it have particularly much sugar. The added bonus is that this Australian brand actually offers online selling and in bulk too. Although buying the mix individually is not at all expensive at $3.50 for 300g, in bulk you get 5kg worth for $35!
