Simply Delicious Banana Bread

  • Preheat over to 3500F (1800C, or gas mark 4).
  • In a food processor, puree the bananas, oil and sugar. Add remaining ingredients and pulse until smooth.
  • Lightly grease a 9 x 5 x 3-inch (23 x 12.5 x 7.5cm) loaf pan with vegetable oil. Pour the batter into pan and bake for 60 mins or until firm in the center.
  • Let cool slightly and then loosen the edges and invert onto a flat surface. Turn loaf flat side down and cool completely. Slice and serve.
  • Yield: 1 loaf
