Real Raw Food - Gingerbread Balls
In an attempt to escape the unrelenting Queensland heat and humidity, Mr Tolerant and I decide to drive north to the coast for the weekend. The coast is always cooler with those gentle sea breezes. Unbeknownst to us, we are also about to embark on a raw food health blitz.
"Energy boost anyone?" my friend sings as she prepares a beautiful gluten free lunch. After the long drive in sweltering conditions, we both could definitely use an energy boost. A small ball is presented in front of us. We eye it suspiciously. "
"There are no activated almonds in it", we are told. Activated food? I am scared - radio-active is all I can think of.
"This is a healthy sweet treat. The kind you can enjoy anytime, which is actually good for you, so you don't have to suffer any guilt."
Now you can't say that about most sweets. I bite in. The texture is firm and the taste of cinnamon, nuts and carob fills my mouth. It is delicious. And healthy too! If this is raw food , then I am a convert.
Back in Brisbane, I decided to recreate the treat for myself. You might like to experiment with the flavours and quantities of each you add, but I was pretty happy with the result of these gingerbread balls. I would recommend keeping some in the fridge so whenever a sweet craving occurs, you can just help yourself!
Preparation Time: 10 mins; Makes approximately 7 small balls
Here's What You'll Need...
1/2 cup almonds
1/2 tablespoon vegetable oil/olive oil/canola oil
2 dates, pitted
1 teaspoon cinnamon
1/2 teaspoon ground ginger (powder form)
1 teaspoon ground cloves (powder form)
1 tablespoon honey
pinch of salt
And Here's How to Make It...
Mix the almonds to a flour-like consistency, using a food processor.
Add the oil and dates. Blend.
Add the spices and salt. Blend. Taste to ensure the spices are evenly spread through the mixture.
Add the honey and blend until the mixture becomes dough-like. Roll the dough into balls. Store in an air-tight container.
